Peanut butter cookies

These crunchy cookies are made with rice flour so gluten free but they contain peanuts which some people are allergic to.

Makes about 15-17


50g butter or margarine

90g sugar

60g peanut butter – chunky is best

100g rice flour

½ tsp baking powder

1 egg


Preheat the oven 180C/Fan 160C/ Gas 4.

Cream the butter or margarine, sugar and peanut butter then add the egg.

Sieve together the baking powder and flour.

Stir into the mixture until smooth.

Line a baking tray with non stick paper and place teaspoonfuls of the mixture on the tray – allow room for the mixture to spread.

Bake for 15-20 minutes until firm.

Leave to cool then remove to a tin with a lid.
