Granola bar

This bar has extra nutrients added by using seeds and dried fruit. The seeds provide protein and fibre, and the dried fruit add colour and texture to the bar.

Makes 12

Ingredients

100g porridge oats

100g – mix of sunflower seeds, sesame seeds, pumpkin seeds, mixed chopped nuts

50g butter or margarine

3 dessertspoons golden syrup or honey

50g brown or white sugar

50g dried fruit – choose from cranberries, sultanas, currants, chopped dates

Method

Preheat the oven 160C/Fan 140C/ Gas 3.

Line a Swiss roll tin (18x30cm) with baking parchment or greaseproof paper, and brush with a little oil to stop the mixture from sticking.

Mix the oats, sunflower seeds, sesame seeds and chopped nuts in a roasting tin and toast in the oven for 10 minutes.

Put the butter or margarine, golden syrup or honey and sugar in a pan and warm gently until the fat has melted.

Take the oat mixture out of the oven and mix into the butter mixture. Stir in the dried fruit and make sure the mixture is well coated.

Put into a tin and press down. Bake for 30 minutes. Leave to cool in the tin.

Cut into 12 pieces.
