Coleslaw


Coleslaw

Modern note – replace some of the salad cream with plain yogurt and season with salt and pepper. And add some extra flavour too, including chopped coriander, a squeeze of lime and some chopped walnuts.

Serves 4

Ingredients

½ small white cabbage

2 sticks of celery, finely chopped

1 carrot, peeled and grated

1 small red apple finely chopped

1 tbs sultanas

Salad cream or mayonnaise to mix

Chopped parsley

Method

Slice the cabbage very finely into shreds.

Mix the cabbage, celery, carrot and apple with enough salad cream so that it blends easily.

Sprinkle in some sultanas.

Serve with chopped parsley.
