Plum cobbler
Cobbler is supposed to have got its name because the topping looks like cobble stones. The topping is a basic scone mix, using an egg for colour and nourishment.
Serves 6
Ingredients
600 g plums or greengages or a packet of summer frozen fruit
100 g sugar
1 tsp ground cinnamon
Cobbler

200 g self raising flour

50 g margarine or butter

50 g sugar

1 egg

1-2 tbs milk

Method

Preheat the oven 190 C/ Gas 5.

Cook the plums or greengages in a little water in a saucepan with the lid on.

Remove the fruit onto a plate and take out the stones.

Put in an ovenproof dish and mix in the sugar and cinnamon.

To make the cobbler, rub the margarine into the flour until it looks like breadcrumbs – twist and shake helps. Stir in the sugar.

Whisk the egg and milk with a fork and stir into the flour mixture so that the mixture sticks together.

Knead with your hands to make a soft dough.

Put small blobs of dough on top of the cobbler to look like cobbles.

Brush with milk and sprinkle on some crunchy sugar.

Put the dish in the oven on a baking tray and bake for 15- 20 minutes until the scones are golden brown.
