Homity pie


Homity Pie is a traditional British dish, originally from the West Country, made famous by Cranks vegetarian restaurant, who made the pastry with wholemeal flour.  The word homity may come from the word home.

Homity Pie

Ingredients
Serves 6 

I packet ready made short crust pastry

1 medium potato peeled and chopped

1 onions

1 leek

3 tbsp oil

25 g butter

15 g parsley – chopped

100 g cheese – grated

2 tbsp cream

Salt and pepper

Chopped chives

Method

  1. Preheat the oven at 220°C / Gas mark 7 
  2. Roll out the pastry and line a flan tin.
  3. Bake the flan blind for 15 mins, sprinkle a little cheese and bake a further 5 mins.
  4. Boil the chopped potato until tender, then mash, roughly.
  5. Chop the onions and leek, and sauté in the oil until really soft for 6-10 minutes.
  6. Mix the potato, onion, leek parsley and half the cheese, then season well.
  7. Fill the pastry case, then sprinkle with the remaining cheese.
  8. Drizzle over the cream and sprinkle over some chives.
  9. Bake for 20 minutes, until golden.
