Ingredients
1 x 200 g tin corned beef cut into cubes
2 potatoes, peeled and cubed
1 onion, finely chopped
2 tbs oil
Chopped parsley to garnish

Method
- Put the potato pieces in a pan of boiling water and boil for 6-8 minutes.
- Fry the onion in the oil in a large frying pan until it is translucent and soft – about 5-7 minutes.
- Mix in the corned beef, stir and add the drained potato cubes and toss and fry for about 10 minutes until parts of the mixture become crisp.
- Serve hot with a sprinkling of chopped parsley.
